What is Bajigur?

Bajigur is a hot and sweet beverage native to the Sundanese people of West Java, Indonesia.

The main ingredients are coconut milk and sugar. The traditional recipe includes fragrant pandan leaves, but now, artificial vanilla powder is used more often. It can also include kopi tubruk, finely pounded coffee.

This drink is sold through vendor cart traveling in villages and residential areas, equipped with portable stoves to keep the drink hot.

Bajigur is the perfect drink for a cold night or a rainy day.

How to make Indonesian bajigur


INGREDIENTS

  • 200ml water
  • 200g palm sugar or brown sugar
  • 1L coconut milk
  • 2 teaspoons ground coffee
  • 2 pandan leaves or 1/2 teaspoon vanilla extract
  • 5 whole cloves
  • A pinch of salt
  • 1 teaspoon fresh ginger (grated)
  • 1/2 teaspoon nutmeg

METHOD

  1. Boil all of the ingredients apart from the coconut milk, the sugar and the salt.
  2. Remove from the heat and let it sit for about 2 minutes.
  3. Bring the liquid to heat again, adding the remaining ingredients (coconut milk, sugar, salt). Simmer gently for 2 minutes.
  4. Serve immediately in warm mugs.
